Dejamos de lado MasterChef, Top Chef, Pesadilla en la Cocina &nbsp;y no s\u00e9 cu\u00e1ntos m\u00e1s para centrarnos en el Concurso Cocinero del A\u00f1o 2014.<\/p>\n<p>Un concurso dirigido a chefs profesionales y en el que es semifinalista Gael Dobarro, chef del restaurante Ul\u00eda, del Hotel Barcel\u00f3 Costa Vasca de Donostia. Compartimos los nervios de este genial hombre nacido hace 30 a\u00f1os en A Coru\u00f1a, que hemos podido conocer gracias a la <a href=\"http:\/\/www.colectivia.com\/san-sebastian\/ofertas\/exquisito-menu-degustacion-en-el-restaurante-ulia-del-hotel-barcelo-costa-vasca-por-solo-32-descubre-la-cocina-del-chef\" target=\"_blank\" rel=\"noopener noreferrer\">promoci\u00f3n <\/a>que hemos publicado en su restaurante. Y sabemos que su trayectoria entre fogones merece el &nbsp;reconocimiento como Cocinero del A\u00f1o 2014. Al concurso ir\u00e1 acompa\u00f1ado de Dan Crespo, su segundo jefe de cocina, un gran cocinero y adem\u00e1s un amigo que entiende la cocina exactamente como la entiende Gael.<\/p>\n<p>Mientras esperamos los resultados de la semifinal, hemos querido hacerle unas preguntillas para que tambi\u00e9n vosotr@s pod\u00e1is conocerle mejor:<\/p>\n<p><strong>\u00bfCu\u00e1l es tu men\u00fa preferido?<\/strong><\/p>\n<p>Mi men\u00fa preferido es aquel en el que m\u00e1s c\u00f3modo me siento. Un men\u00fa que me d\u00e9 la posibilidad de ofrecer peque\u00f1as muestras de la cocina que elaboramos en el Restaurante Ul\u00eda. Nuestro objetivo es que el cliente pueda saborear la cocina que hacemos, muy cercana al mar e intentando mimar el producto al m\u00e1ximo. Transmitir en nuestros platos la esencia del Cant\u00e1brico y que el cliente lo pueda degustar.<\/p>\n<p><strong>\u00bfQu\u00e9 plato recomiendas a los usuarios de Colectivia para degustar en tu cocina?<\/strong><\/p>\n<p>El pulpo.&nbsp; Es un plato que mantiene mis or\u00edgenes gallegos cerca. Siempre he buceado y pescado pulpo en Galicia y por eso creo que es el mejor embajador del mar y de mi tierra.<\/p>\n<p>Siempre se identifica el pulpo con la manera de elaborarlo a la gallega y mi idea es respetar esto, conservando los mismos productos pero d\u00e1ndole una perspectiva m\u00e1s innovadora. En el Restaurante Ul\u00eda transformamos los mismos ingredientes y tratamos de darle otra visi\u00f3n.<\/p>\n<p><strong>Bajo tu experiencia \u00bfEs cierto que en el Norte somos de buen comer?<\/strong><\/p>\n<p>S\u00ed,&nbsp; si entendemos buen comer como ser m\u00e1s selectivo a la hora de escoger lo que vamos a consumir.
